Raw Zucchini Lasagne & Appetizer Roll-ups – Tampa Bay VegFest & St. Pete HealthFest 2018

Raw Zucchini Lasagne

What you’ll need:

  1. All GF Vegan Oil-Free Nut-based Italian Meat or substitute of choice. Chop Parsley, Colored Peppers & other vegetables of choice and combine together. Set Aside.
  2. All GF Vegan Nut-based Plain, Garlic or Chive Cheese Spread or substitute of choice. Gradually add water and combine well to a creamy sauce-like texture. Be careful how much you add, you don’t want it too runny! Set aside.
  3. Optional – Not-Tomato Sauce (recipe below) or substitute of choice. Blend a little Sauce with the ‘Meat’ at a time to moisten well. Too much will make it messy during assembly and plating. Set the mixture aside again and save any leftover Sauce to drizzle over the finished Lasagne and the rest can be stored in an airtight container in the fridge for up to a week.
  4. Vegan Parmesan Cheese (recipe below) or substitute of choice.
  5. Large Organic Zucchini, we recommend one for each person. Slice long ways with a Mandolin slicer, sprinkle a little salt on each slice and rub well. This is meant to soften the Zucchini, not to season it, so be careful not to add too much. Once done, lay slicer in a strainer over a bowl to allow the liquid to be released. Turn after 10mins, slices should be softer and have released some liquid. Once all slices have softened, about 20-30mins total, pat dry and set aside.

To assemble:

  1. Place Zucchini slices side by side to form a rectangle or square and add a layer of the Meat mixture. Then add a second layer of Zucchini, add the second layer across the first (not parallel) to help your Lasagne stay together. Add a layer of Cheese Sauce.
  2. Alternate layers between the Meat mixture and the Cheese, ideally two of each. The top layer should be topped with both the Meat mixture followed by the Cheese Sauce and the Vegan Parmesan.

Not-Tomato Sauce

  • Soak 1 tbsp of Tamarind Paste in ½ water. Stir well, feel free to use your hands to break it up faster if needed. Strain and top of the mixture with water to get 1 full cup
  • In a food processor or high-speed blender combine the following:
    • 1 Large Carrot + ½ Red Pepper + 3-4 Garlic Cloves
  • Add the liquid a little at a time, Basil & Oregano till well blended.
  • Optional: Add 1-2 tbsp Cheese Sauce for a creamier consistency
  • Optional: Salt, use restraint, the Zucchini have already been salted, so has the Italian Meat & Cheese Base.

Vegan Parmesan Cheese

  • In a food processor combine the following until you get a sand-like texture:
    • 5.5oz Dry Raw Cashews (unsoaked) + 0.5-1oz Nutritional Yeast + 2 pinches Garlic Powder. Add salt as needed.
  • Store leftovers in an airtight container up to 10days in the fridge.

Tadaaaaa… Enjoy!



  • Place a teaspoon of the Meat Mixture followed by the Cheese Sauce on the tip of each Zucchini Slice and roll it for a quick, easy and delicious Appetizer!
  • Use Meat Mixture without Cheese, or Cheese Sauce without Meat for varying flavors. You can also use Any Flat Lettuce leaves instead of the Zucchini to make a Lasagne Salad, just trim and stack the lettuce and layer as you would the Zucchini.
  • Prefer it cooked? Foil a baking dish, later you Zucchini and filling the same way and broil for a few minutes before sprinkling the Vegan Parmesan on top. You can also top each Cheese layer with Vegan Mozzarella Shreds, including the top layer. We prefer So Delicious or Follow Your Heart.
  • Like the idea but want to mix things up without the Zucchini? Well then, add some chopped Asparagus and stuff half of a Bell Pepper for a Main Course or half a Mini Sweet Pepper for an Appetizer. Same works with Mushrooms too, a large Cap for a Main or buttons for Appetizers.
  • Feel free to vary your ingredients too, add Chopped Spinach, Bok Choi, Leeks, Arugula, Asparagus, Zucchini or whatever you enjoy in the mix depending on

Stuffed Sweet Peppers Two Ways


What you’ll need:

  1. All GF Vegan Oil-Free Nut-based Italian Meat or substitute of choice. Chop Parsley, Colored Peppers, Zucchini & other vegetables of choice and combine together. Set Aside.
  2. All GF Vegan Nut-based Plain, Garlic or Chive Cheese Spread or substitute of choice. Gradually add 1-2 tablespoons of water and combine well to a make it slightly creamier but not too thin that it wouldn’t hold. Chop Parsley, Dill & Fresh or Dried Chives and combine together with the Cheese. Set aside.
  3. Parsley & Dill for Garnish.
  4. Colored Mini Sweet Peppers

To assemble:

  1. Trim the stem (save usable parts for the Meat Mixture), seeds and white parts inside the Peppers so it looks like a hollow (boat) hull.
  2. Stuff the Peppers with the two mixtures. Use different colors for each type and garnish the Cheesy Peppers with Dill & Meaty ones with Parsley.

We casually tell our guests that it’s all vegan, just to relish their confusion and pleasant surprise!




  • Add Raw Vegetables, like Asparagus, Scallions, Spinach, or your favorites and stuff a regular sized Bell Pepper to make it a main course instead!
  • Stuff the Bell Peppers with the Cheese Mixture instead, again combined with tons of Veggies or Rice if you don’t want to keep it 100% Raw.

  • Or stuff a Mushroom Cap instead!


Our latest: Preserves!

The idea behind making our own Preserves came from one of our now regulars. Yes, a month after launch and we actually do have quite a few – yay!

Those who have stopped by our booth will know that we provide samples of every product that we offer for sale, in addition to a few others here and there that we’re testing and looking for your feedback on before packaging and adding to our main lineup. Anyhoo, the item in question was our Banana Raisin Flat’bread’ sample that we had spread with Almond Butter as a ‘Serving Suggestion’ sample that brought all this about. If you’ve sampled it then you may have also yearned for that additional layer of sweetness. Think Peanut Butter and Jelly turned healthy.

In any case, as we approached other vendors and sampled other products it quickly became evident that we would have to create our own in order to remain loyal to our brand’s mission: To create healthy Raw, Vegan, Gluten and Soy Free options, alternatives and varieties for those who must and/or choose to follow this kind of diet or enjoy incorporating these foods into their diet. So naturally using a product that contained even the best of the healthiest of sugars and pectin, which is traditionally added to Jams and Jellies, was just not going to work.

And with that said, we went ahead and created that alternative. No added sugar, Raw, Vegan, Gluten and Soy Free Preserve aka Jam. But not just one variety, we made three! So what sweetens those yummy Preserves? None other than Dates and Fresh (or Dried) Fruit. The only other main ingredient, if any, is citrus and herbs – and that’s all!

The Preserves we have to offer, for now, are:

Strawberry Preserve
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free)

Yummy Strawberry flavor, fresh, sweet and a little tangy.

Chipotle Fig Preserve
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free)

The mild Chipotle heat, sweet citrus, and crunchy Fig seeds definitely complete this blend.

Blueberry Mint Preserve
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free)

Berries and Mint are a great duo of freshness with the bonus of perfect sweetness.

Update: One month since we launched!

Yes, our latest update is that it’s been one whole month since we launched our brand and products in Clearwater and Safety Harbor consecutively. It went by way too fast and so much has been happening since.

So here’s the breakdown of it all:

  1. New Products Update

    Rawmmus: In addition to our Original, Lemon Garlic, Mediterranean and Cilantro Jalapeno flavors, we’ve added Chipotle Cumin to the family and are working on a new flavor to be offered very soon once it’s been perfected. The base remains the same, and still no Chickpeas/Garbanzo Beans.

    ‘Cheese’cakes: Though we’ve had amazing feedback on our Keylime, Cran-Orange and Plain varieties, we couldn’t just leave it there. We’ve added a heavenly Basil ‘Cheese’cake, Salty Cacao and Cacao Cayenne. But we’re still not done here either, we’re testing a few more flavors that we feel we just can’t live without. So be on the lookout!

    Preserves: Oh yeah, we totally are doing that! Last weekend we asked for feedback on 3 varieties we put together at Safety Harbor’s Market on Main. All Raw, Vegan, Gluten and Soy Free, of course, and no Sugar or Pectin. So what’s in it you ask? Sssh, find out our secret here. The flavors available this coming weekend are Strawberry, Blueberry Mint and Chipotle Fig.

  2. Preorders and Online Ordering (currently only in Pinellas County)

    We are now taking orders by email and either:a. Deliver throughout Palm Harbor (excluding the East Lake area)

    b. Meet you at several easy to find/known locations along US19 from East Tarpon Ave. to the North and to Countryside Blvd./Mall to the South. Also along Alt 19/Palm Harbor Blvd./Bayshore Blvd. from East Klosterman Ave. to the North and to Curlew Rd./Causeway Blvd. to the South.

    c. For orders over $35, we will deliver to Dunedin, Tarpon Springs, Safety Harbor, Palm Harbor/East Lake Area at the Brooker Creek’s Publix or South of Ridgemoor Blvd., Clearwater East of Keene Rd. and Oldsmar West of Racetrack Rd.

    d. For excluded areas or orders under $35, we will deliver directly, again only within Pinellas County, for a fee of $5 anywhere North of Gulf to Bay Blvd. And $10 for St. Petersburg and the surrounding areas within the county.

    As for Online ordering, we’ll update you very soon once we get it up and running. It’s slightly more complicated since we may need to do parts of it manually, but we’re on it and hope to get it done within the next few weeks!

  3. Packaging & Labeling

    It didn’t take long to discover that our packaging needed upgrading, and you’ll soon see the following improvements:
    – New labels created for our main products and new items included gradually.

    – Crackers and Flat’bread’ packaging has been replaced as the previous one was too big/small, respectively.

    – ‘Cheese’cake packaging was improved, but we think it can be even better – feedback, suggestions or recommendations appreciated!

  4. Venues

    Markets: We had great success at Clearwater’s Pierce Street Market and plan on being there throughout the summer every 2nd Saturday. Safety Harbor’s Market on Main has been our Sunday spot. We’re also constantly trying to make our products available in other areas as well.
    We’ve attended Dunedin’s Downtown Market last Saturday they were open and hope to return before they close for the summer. And last but certainly not least, we’ve reached out to both the Saturday Morning Market in St. Petersburg and Hyde Park Village’s 1st Sunday Market and hope you’ll see us there soon. We will continue to create utilize Facebook to announce ‘Event’s we are attending to let you know our whereabouts in advance, so check back to find out where you can find us next!

Another New Product – Basil ‘Cheese’cake!

So we remained busy over the Easter break experimenting with a few flavor combinations. We decided to whip up a batch of these awesome Basil ‘Cheese’cakes so we can get your feedback on at our upcoming weekend’s events. Honestly, we didn’t anticipate it would go THAT well. We even counted on having a few of those left over for ourselves as a treat after a long weekend. But apparently, we were wrong. As it turned out, we didn’t even come close to making enough cause they were sold out on the first day!

Anyhoo, let’s just agree on one thing as we all discovered over the weekend. Basil is certainly one of the most versatile herbs out there. Although most of us have only really come across it in savory foods, it’s also perfect for sweet treats just the same. Think mint, but significantly sweeter and brighter. Hence the common name ‘Sweet’ Basil!

This is definitely our new favorite hands down! Need we say more? And yes, it is quite sweet, though not in an overwhelming too much kind of way. It’s also very fresh. As with all our ‘Cheese’cakes, this is best stored in the freezer as it will remain fresh for a few weeks. If you prefer it more like ice cream kind of solid, then you can eat it straight out of the freezer. If you prefer it light and airy, just leave it out of the freezer for a little bit. Maybe even keep it in your fridge for an hour to give it a chance to soften more. We prefer ours more in between, so we take it out of the freezer 10minutes before treat time. But this is just our best of both worlds.

So yes, the gears have been in motion and we’ve added yet another new variety for to try. The base remains the same but we’ve spiced it up a touch or two.

We’re very thankful for everyone who stopped by our booth as we launched our brand this weekend at two consecutive events, the Pierce Street Market in Clearwater on Saturday and Safety Harbor’s Market on Main on Sunday. We had a great time and hope you all did as well, so again, thanks!

Whether you follow a diet that is Raw, Vegan, Gluten Free, Soy Free, have dietary restrictions, enjoy healthy food, just curious what all that hype is about or any combination of that, we sincerely thank you for your interest in our brand and products, and of course, the great supportive feedback you provided! You have no idea how much this has fueled us to continue creating, perfecting, and yes expanding our product line. Though the launch preparation has drained our energy quite a bit, just meeting and interacting with you has certainly given us the excitement to do even more and drive to keep on going!

Raw Packaged Foods: To freeze or not to freeze

We’ve researched for what seemed like an eternity to make sure our foods were prepared, stored, sold and consumed at the very best they can be.

Unlike cooked foods, raw foods have a higher nutritional value. Yet, that doesn’t automatically mean that it would remain that way forever especially when such foods are perishable or aren’t kept intact nor preserved. That is not to say that despite that they won’t still have greater benefits than their cooked counterparts. In any case, when searching for an answer to the question of whether to freeze or not, you will often come across a variety of articles that will either tell you that freezing undeniably will cause loss of nutrients (like this one) or on the flip side that all is well and great with freezing (like this).

Bottomline: We freeze. Why? Well, what most of the articles we’ve read through failed to address was that packaged raw foods have often already been cut, blended or otherwise processed in one way or another and that in turn means the clock on any loss of their high nutrients has already started ticking. More so, our recipes, for the most part, either contain a fair amount of nuts and/or seeds which when combined together result in a much lower water content and therefore retain more of their nutritional value OR are they’re fully or mostly dehydrated (dried). Therefore, we freeze our products to a. slow down or even halt any level of nutrient loss from the time of preparation up to the point of consumption and b. to ensure that when our products are sold and consumed that they are at their freshest possible state.

Yummy Raw Cookies – Not 1, not 2, but 4 varieties to enjoy!

After almost a year of experimenting with different ingredients and methods, we came up with the perfect recipe for a raw cookie.

Although our cookies are not baked, they somehow taste a bit like sweetened cookie dough. They consist of only a handful of ingredients with Almonds being the primary star and Agave the sweetener. The cookies are lightly dehydrated at 105F for a few hours giving them a bit of an outer crust, then they’re immediately frozen until they’re ready to serve since we love them with a bit of crunch. If you prefer a softer cookie, you can take them out of the freezer a few minutes before serving. The best part is that they can be stored in the freezer for a significantly long period of time, a couple of months even – just make sure they’re kept in an airtight (frost-proof) container.

Cacao Nib Cookie
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free – Contains Tree nuts)

These cookies are a great healthy alternative to the same old Chocolate Chip. Cacao Nibs satisfy your chocolate cravings and are a nutrient dense superfood containing a rich supply of antioxidants, dietary fiber, magnesium, potassium and are low in carbohydrates and sugar. Now that’s a treat!

Mulberry Brazil Nut Cookie
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free – Contains Tree nuts)

One of our favorites. Mulberries, another superfood, aside from their sweet flavor and chewy texture are an excellent source of vitamin c and protein. They provide a plentiful amount of iron, fiber and calcium and contain resveratrol. Brazil Nuts are high in protein, calcium, iron and zinc and are one of the best natural sources of selenium. We’ve combined the two and the outcome is this one amazingly yummy cookie.

Pecan Raisin Cookie

Our other favorite. Pecans help lower ‘bad’ cholesterol, increase ‘good’ cholesterol, are an excellent source of vitamin-E, riboflavin, niacin, thiamin, pantothenic acid, vitamin B-6, folates, manganese, potassium, calcium, iron, magnesium, zinc, and selenium, helping keep you healthy. As for the raisins, they also are an excellent source of iron, potassium, magnesium as well as fiber. They have antioxidant properties and contain high amounts of boron essential for a well-functioning brain, help purify the blood, eliminate toxins and reduce high levels of blood pressure. And that’s not even why they’re our favorite.

Chocolate Chip Cookie

This cookie may not be 100% Organic nor 100% Raw, but of all the younger ones who’ve sampled our cookies – and there were a lot of them – this one was the crowd favorite so there was no chance we were going to get away with leaving them out. Although the chocolate chips are sourced, are not organic and we presume not raw either, they are created from natural ingredients and are still Gluten/Soy Free and Vegan. But, did we mention that they’re a huge hit with the little ones?

Raw Mini ‘Cheese’cakes – No Cheese here folks..

Transforming both aspects of a traditional Cheesecake – crust and filling, into a Gluten Free, Vegan and Raw dessert while retaining some of its identity may not seem like an easy task, but it’s certainly doable.

It took a bit of experimenting to get the crust just right, so its not crumbling but not too chewy either. The real treat was the filling trials, getting that rich creamy consistency without any dairy that is just the perfect amount of sweet. We used Cashews instead of the cream cheese and only a handful of other ingredients to make this amazing dessert. Once put together off to the freezer it went, and there it stayed until 5-10 minutes before it was ready to eat. They can keep in the freezer for up to a month, as long as they’re stored in an airtight (frost-proof) container.

Mini ‘Plain’ ‘Cheese’cake
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free – Contains Tree nuts)

There is nothing ‘plain’ about this dessert. The crust is the right amount of crunch and chew, while the filling is creamy and rich with a hint of coconut. If you like it light and airy, leave it out of the freezer longer. If you prefer it more solidified like ice cream, then eat it straight out of the freezer. We like it more in between, 10minutes out of the freezer is our best of both worlds.

Mini Cran-Orange ‘Cheese’cake
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free – Contains Tree nuts)

One of our favorites. Aside from nutritional benefits, the cranberries give this filling a lovely pink-orangish color and along with oranges, the flavors blend very well, sweet with a hint of sour. The orange zest adds a fantastic kick of citrus and the tiny bits of cranberry an added richness to an already creamy and rich filling. As with our Plain ‘Cheese’cake, if you like it light and airy, leave it out of the freezer longer. If you prefer it more solidified like ice cream, then eat it straight out of the freezer. We like it more in between, 10minutes out of the freezer is our best of both worlds.

Mini Keylime ‘Cheese’cake
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free – Contains Tree nuts)

Our other favorite. Its a Keylime dessert, really what more can we say. If you’re a Keylime pie fan, you’ll love this one. If you’re not so sure, imagine this – sweet keylime flavor and zest that adds a citrusy freshness to a creamy filling on top of a crunchy chewy crust. You get the idea. As with our other ‘Cheese’cakes above, if you like it light and airy, leave it out of the freezer longer. If you prefer it more solidified like ice cream, then eat it straight out of the freezer. We like it more in between, 10minutes out of the freezer is our best of both worlds.

Its not exactly your every day ‘bread’, its Raw Flat’bread’!

For lack of a better name, we more than gladly settled on Flat’bread’ since they’re not exactly bread in the conventional sense per se. More so just in terms of its use.

These are a great substitute for those unable to consume Gluten or Soy, with or without a Vegan Raw diet. Even my preschooler loves them and eats them as is, just plain – and he’s one picky eater. These Flat’bread’s are soft, can be easily folded without crumbling or falling apart and are spreadable. And while the varieties on the market have 3 or 5 slices per package, ours have 8 slice packages. The primary ingredient in our Flat’bread’ is none other than Celery (except for our Banana Raisin Flat’bread’), but you probably couldn’t tell just by tasting alone as it takes a huge step back to the other ingredients and seasoning in each variety. Those too will keep for a long time in the freezer. We haven’t been able to keep them longer than a few weeks, though as they go very fast in our kitchen. But, the good news is that they will still be ready to eat without thawing!

Mediterranean Flat’bread’

The highlight of our Mediterranean product line is none other than Greek Kalamata Olives which helps keep our Flat’bread’s soft. If you haven’t tasted those, you’re truly missing out. One of our favorites, especially for lunch spread with Avocado, some thin Cucumber slices, and a handful of Arugula. Unlike regular bread, a little goes a long way with these Flat’bread’s as they’re not just delicious, but very filling too.

Rye Flat’bread’
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free)

If you like Rye bread, then you’ll love these. The flavor is very rich and they make great sandwiches so fill them with your favorite. It’ll take a lot to make them crumble, and we have yet to figure out what the magic number might be as we stop short of the ‘kitchen sink’.

Garlic Dill Flat’bread’
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free)

You can definitely taste the Dill in these Flat’bread’s, but the Garlic is close behind. Pick up a pack today and make your own Raw Gluten Free Lasagna! Just replace the pasta with these Flat’bread’s, top it with some sauce or your favorite fillings as you would with pasta but make sure to serve fresh before they get too soggy!

Banana Raisin Flat’bread’

These are our other favorite – and our preschooler agrees. They’re moist, flavorful and healthy – no Celery in this one, but you probably figured out we used Bananas instead. This is delicious for breakfast spread with raw almond butter (though peanut butter works just as well) and/or fruit slices (more Bananas maybe?) Mmmm, great healthy start to the day right here!

Our very own take on Hummus – Raw-mmus!

First off, it was a bit of a struggle coming up with the perfect name for this yummy second cousin of the well known Middle Eastern Dip – Hummus. We were torn between the straight up Raw Hummus, the more obvious Western Hummus and a few total flops. I mean, we couldn’t just call it Hummus which contains cooked Chickpeas/Garbanzo Beans since ours are neither cooked nor contain this ingredient.

So we decided to mash the words together and come up with our own and there it was – Raw-mmus. Pretty clever, eh? You heard it here first!

After experimenting for a long time, researching, experimenting some more and trying various combinations, we came up with the perfect ingredient combination for our recipe and it’s star ingredient is: Zucchini, and we couldn’t be happier!

Each container is approximately 8oz of yumminess and it’s perfect for freezing which extends its shelf life of only 5-7 days in the fridge. The coolest thing is that when you take it out of the freezer there’s none of that pooling water, it’s just as fresh as can be. So obviously, we highly recommend storing it in the freezer when not using it right away as it retains more of the nutritional value and freshness.

Just like plain Hummus, but even healthier. It’s chunky, creamy and oh so yummy!

Lemon Garlic Raw-mmus

The spice is significantly toned down in this combination and it pairs super well with the fresh flavors of Cilantro and the remaining ingredients. More flavor, little to no heat.

Snack time favorites – Raw Crackers are served!

Crackers here, crackers there. Cracker, cracker everywhere – but what makes this one so special eh?

Well, if the fact that they’re raw, vegan and gluten/soy free all in one isn’t enough, then maybe it’s the size of our ingredients list and how easily you’ll find pronouncing every single one of them. Primary ingredients are Flaxmeal and Sunflower seeds along with seasoning depending on the cracker type and maybe another seed type here and there making up this yummy 5oz of goodness.

Can’t go wrong!

And having been dehydrated for almost 24hrs with the added silica gel packages (to absorb any moisture), they’ll remain crisp for a while as long as you keep the bag properly sealed. But even if you forget, just pop them in your oven and set it to 105f for a few hours to crisp them back up. If you aren’t too keen on keeping them raw, increase the heat a bit and reduce the time checking often to ensure they don’t burn.

Cracked Pepper Cracker

Not being able to consume nightshades we researched alternatives to still get a bit of that ‘kick’ without the traditional pepper. The answer was amazingly peppercorns. So yes, they sure are peppery! With extra pumpkin and chia seeds, those are our favorite!

Mediterranean Cracker
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free)

Having created an Olive flavored Flat’bread’ and Rawmmus, we thought no harm in adding a cracker too. And there it is, another ode to the great Kalamata Olive. Pretty rich flavor, and definitely another favorite.

Seasoned (aka Zesty) Cracker
(Organic, Raw, Vegan and Gluten/Soy/Nightshade Free)

The intention was to have a milder flavored cracker that won’t overshadow any other bold flavors it may be paired with, and though we did somewhat achieve that, the flavor is in no way boring, bland or ‘mild’ per se. It just plays well with others. It’s herbal and citrusy but not overpowering so you have the choice whether to pair or not to pair.
