Raw Mini ‘Cheese’cakes – No Cheese here folks..

Transforming both aspects of a traditional Cheesecake – crust and filling, into a Gluten Free, Vegan and Raw dessert while retaining some of its identity may not seem like an easy task, but it’s certainly doable.

It took a bit of experimenting to get the crust just right, so its not crumbling but not too chewy either. The real treat was the filling trials, getting that rich creamy consistency without any dairy that is just the perfect amount of sweet. We used Cashews instead of the cream cheese and only a handful of other ingredients to make this amazing dessert. Once put together off to the freezer it went, and there it stayed until 5-10 minutes before it was ready to eat. They can keep in the freezer for up to a month, as long as they’re stored in an airtight (frost-proof) container.

Mini ‘Plain’ ‘Cheese’cake

There is nothing ‘plain’ about this dessert. The crust is the right amount of crunch and chew, while the filling is creamy and rich with a hint of coconut. If you like it light and airy, leave it out of the freezer longer. If you prefer it more solidified like ice cream, then eat it straight out of the freezer. We like it more in between, 10minutes out of the freezer is our best of both worlds.

Mini Cran-Orange ‘Cheese’cake

One of our favorites. Aside from nutritional benefits, the cranberries give this filling a lovely pink-orangish color and along with oranges, the flavors blend very well, sweet with a hint of sour. The orange zest adds a fantastic kick of citrus and the tiny bits of cranberry an added richness to an already creamy and rich filling. As with our Plain ‘Cheese’cake, if you like it light and airy, leave it out of the freezer longer. If you prefer it more solidified like ice cream, then eat it straight out of the freezer. Mini Keylime ‘Cheese’cake

Our other favorite. Its a Keylime dessert, really what more can we say. If you’re a Keylime pie fan, you’ll love this one. If you’re not so sure, imagine this – sweet keylime flavor and zest that adds a citrusy freshness to a creamy filling on top of a crunchy chewy crust. You get the idea.
